Everything you need to know

You have the opportunity to purchase an entire animal, a half, or a quarter. The processor can do up to four "cut sheets" per animal. Cost is determined by hanging weight, which is the animal's weight after the head and all entrails have been removed and is put into 14-day cold storage for aging.

The hanging weight differs from the finished weight (or what you would take home). For general planning purposes, a 1000lb animal would have a hoof weight of about 550-650lbs. Of that hanging weight, after all the cuts have been made and are individually packaged to your cut specifications you can expect 400-550 lbs of finished beef. Granted, these figures would be split 1/2 or 1/4 depending on your order (half a cow (side), quarter, etc.)

Order Details

We work with a local butcher shop in Lampasas (M&M Custom Slaughter and Processing). We coordinate scheduling and animal drop-off with them. They will age the animal for approximately 14 days in the freezer and cut it to your exact specifications. Each cut will be individually packaged, labeled, and vacuum sealed.

Finishing

Halo K charges $5.50 to $6.50 dollars per pound depending on your specifications (fed out, grass-finished, 100% grass-fed).

M&M Processors charge $1.05 per pound for processing to order, storage, and packaging plus a 65 dollar "kill fee" which would be proportionate to your order (eg $25 if you ordered half an animal).

Pricing
