Your Purchase Options at a Glance

You have the option to purchase a whole animal, a half, or a quarter. Our processor can accommodate up to four custom cut sheets per animal.

Pricing is based on hanging weight, which is the animal’s weight after the hide, head, and entrails are removed and the carcass is placed into 14-day cold storage for aging which optimizes flavor and tenderness. 

Hanging weight is different from the finished take-home weight. For general planning purposes, a 1,000–1,200 lb animal will typically result in a hanging weight of approximately 575–675 lbs. After aging, cutting, and packaging to your specifications, you can expect roughly 400–500 lbs of finished beef from a whole animal.

These amounts are proportionally divided based on your order size (half or quarter). I am  happy to walk you through expected yields so you know exactly what to expect.

How Ordering Works

Aging, Cutting, and Packaging

We partner with M&M Custom Slaughter and Processing in Lampasas, Texas — a local butcher shop that shares our commitment to quality, care, and attention to detail.

Halo K coordinates all scheduling and animal drop-off directly with the processor. After arrival, your animal is dry-aged for approximately 14 days to enhance tenderness and flavor.

Once aging is complete, M&M cuts your portion exactly to your specifications using your selected cut sheet. Every cut is individually packaged, clearly labeled, and vacuum sealed, ensuring long-term freshness and easy storage. This process ensures you receive premium-quality beef that is consistent, traceable, and handled with care every step of the way.

Halo K pricing is straightforward and transparent. Your total cost consists of two separate charges: one from Halo K and one from the processor.

Halo K (The Ranch)

Halo K charges $6.50–$7.00 per pound, based on hanging weight, depending on your finishing and cut specifications. Previous customers enjoy a two-year “lock in” price, so they can expect the same price for beef two years in a row. 

Unique requests may occasionally incur a small surcharge, such as transitioning pasture-fed animals to grain and then grass. A $250 deposit per quarter is required to secure your processing appointment.

Processing (M&M Custom Slaughter & Processing)

M&M Processing currently charges $1.25 per pound for processing to order, storage, and packaging. In addition, there is a $85 dispatch fee, which is prorated based on your portion (for example, $42.50 for a half animal). Processing rates are subject to change each year.

Payment Details

Payment to Halo K and M&M is handled separately. Halo K accepts most payment apps such as Venmo, Zelle, or ApplePay. If you don’t use these I’m happy to make other arrangements. Payment to M&M is due at pickup and may be made by check or credit card.
